I LOVE LOVE LOVE FatFree Vegan Kitchen - Susan is so rad.

Sorry about the mini quiche blahs, that particular recipe is actually a breakfast staple in our house now. I use my silicone cupcake liners to get the baked-through delish consistency that I like and always up the bake time (although that may be my crappy apartment oven talking...).

Another vegan quiche I'm dying to try out this weekend comes from my newly acquired Vegan Brunch cookbook - there's this caramelized vadalia onion quiche that is CALLING MY NAME!!

As for your nutritional yeast and tahini purchase, those are ever-present in our kitchen. We use nutritional yeast at least once a day actually. You'll be hugely surprised at how much you're going to go through that stuff now that you've introduced into your cooking world. The Un-Cheese Cookbook is a great place to find excuses to use both :)

Based upon your (failed) recommendation, I made the Mini Crustless Tofu Quiches. I DID spray the tins, and underestimated the cooking time, but put them back in when they were not browned all over. I didn't have mushrooms so I substituted shredded carrots.

Simply FABULOUS! These are so good I could have eaten the whole batch in one sitting. Who knew? They taste so savory. I figure this is due to the nutritional yeast (noted to taste meaty) and fresh rosemary. Next time I'm going to try fresh tarragon.

I suspect you could use just about any vegetable in these. Bravo Drmiggy and Fat Free Vegan Kitchen! Wife agrees totally with all the above.

I have a hard time envisioning a life without cheese, but I will admit those do look pretty good.
